Provenance: The 46th parallel surrounds, to the north, the Alto Garda Trentino, the furthest northern growing area in the world, according to olive tradition, and Casaliva is the main native variety.

Type of soil: very shallow, medium texture, with a limestone tendency S.l.m. Height : 200-350 m
Type of Harvest: Harvested by hand in a stage of early maturing
Extraction Method: Cold continuous cycle, three-phase plant.
Color: golden green with good clarity
Smell: fruity and intense, tightly green, with a distinct herbal feeling due to the arugula and artichoke, with touches of green almonds, in particular, but also pine nuts and green apple.
Taste: initially harmonious and delicately bitter to the taste, followed by an emergent stronger, spicier structure, accompanying their newfound aromatic perceptions, and finally closes with a nice mineral note.
Opens harmonious nose, with notes of almond, artichoke and aromatic herbs; the palate is soft with delicate shades of lettuce, celery, and almonds: delicate, bitter, and spicy. Serving suggestion: salad of chickpeas, grilled chicken; in adequate doses this oil does not cover the taste of food, but enhances it, try it with salted meat of Trentino or tagliata and carpaccio beef.
