Olive Variety: Frantoio, Moraiolo, Leccino, Olivastra and others in smaller percentages.
Soil type: superficial, medium-textured, with calcareous tendency.

Harvest Type: hand-picked in October/November

Bouquet: Medium fruity, clean of olive, with herbaceous notes of artichoke and ripe fruit.
Taste: Fresh and clean, it opens with a slight sweet sensation followed by a pleasant bitter and spicy charge of medium intensity, rich persistence of vegetable notes dominated by the herbaceous sensation of artichoke.
Excellent raw on soups, vegetables, pulses, meat, bruschetta, pinzimonio, salads and medium-flavoured fish; in cooking, ideal for preparing sauces, soffritti, vinaigrettes, fried food and bases in general.
