Extraction Method: The olives, within 6 hours of collection, are processed in the company mill, equipped with a toothed-disk crusher and a nitrogen system to work in the absence of oxygen in a continuous cycle (2 and a half phases).
Color: golden with green tones
Smell: light fruity with grass, flowers and almond overtones
Taste: it opens with a sweet tone, followed by light bitter and spicy, with a spicy final tone
It is excellent on boiled fish, to prepare mayonnaise, béchamel and cake.
