Extraction Method: The olives, within 6 hours of collection, are processed in the company mill, equipped with a toothed-disk crusher and a nitrogen system to work in the absence of oxygen in a continuous cycle (2 and a half phases).

Organoleptic characteristics

Color: golden with green tones

Smell: medium fruity with freshly cut grass, artichoke, thistle and basil, with balsamic tones

Taste: it open with a bitter tone, followed by a spicy balanced taste, with a pleasant final spicy tone
