Harvest: hand-picked with electric shakers, carried out in the first week of October
Extraction method: the olives, within 6 hours from harvest, are processed in an outside mill, with a continuous cycle (2 stages), equipped with toothed-disc press and nitrogen plants, to work in the absence of oxygen
Bouquet: medium fruity with strong undertones of chicory and green apple. It is possible to also feel less intense notes of citrus fruit, green balsamic almonds, rather clean and pleasantly fresh.
Taste: a slightly bitter initial taste, reminiscent of almonds and celery, together with a pleasant spiciness, which grants freshness and length to the oil. The finish has an aftertaste of rocket.
The Leccio del Corno is ideal for dishes such as ribollita, grilled meat, artichoke carpaccio, grilled vegetables and as an ingredient of Pinzimonio oil dip. It is a tasty but not overwhelming oil
