Olive variety: Ottobratica (70%) and cassanese (30%)
Soil type: about 300 m asl in the estate “Fiolli”of about 17 hectares. Olives are harvested from selected trees of the varieties ottobratica and cassanese

Harvest: hand-picked and with electric shakers in mid-October
Extraction method: the olives, within 6 hours from harvest, are processed at the 3-stages company mill, with a continuous cycle.
Storage: In stainless steel vats, under inert nitrogen
Color: golden with green reflections
Bouquet: medium fruity
Taste: well-balanced and captivating, with light bitter tones and slightly spicy. The finish is harmonious and elegant, with a scent of green grass. Bitter and spicy are moderate and well-balanced, ending with notes of green almond.
Expert Opinion: suitable for all raw dishes, it reveals its quality on grilled meat and fish, and wild green salads. It is at its best with legumes, especially cold dishes, transforming the meal in a unique pleasantness.
