Origin: Frantoio Gaudenzi Trevi (PG) Umbria
Olive variety: Moraiolo, Frantoio, Leccino
Soil type: 450 m asl, about 25,000 trees.
Harvest method: hand-picked with mechanical shakers.
Color: Intense clean golden yellow with delicate hues of green.
Bouquet: Full and complex, rich of notes of artichokes and cardoon, alongside hints of black pepper and almonds.
Taste: Refined and captivating, with hints of chicory and lettuce and aromatic nuances of mint, rosemary and sage. Intense bitter and strong spicy.
Ideal on raw meat carpaccio with porcini mushrooms, artichoke salad, gratin tomatoes, lentil soup, pasta dishes with sausage, boiled octopus, red meat or grilled game, mature stretched-curd cheese. It can be used raw to season medium-structure cold and hot dishes.
