Organoleptic characteristics
Color:straw yellow, slightly opaque.
Bouquet: A brilliant and fresh vegetable hint from the earliest nose; scents of officinal herbs and wild aromatic herbs, such as rosemary and sage. A balsamic note of eucalyptus is rather marked.
Taste: It is fragrant and bitter in the mouth at the start, followed by hints of black pepper and sweet pepper, all in harmony, neither too strong nor too mild. Excellent balance.

Excellent for shellfish still warm, pasta with rich sauces and to enrich fresh salads with onions, citrus fruit and pine nuts.
