Origin: Olive Farm Marfuga

Olive Variety: 100% Moraiolo

Soil Type: 14.000 trees, 300-400 m a.s.l.

Harvest Type: hand-picked.

Extraction Method: the olives, within 12-24 hours from harvest, are processed in the farm’s own 2 ½-stages continuous cycle mill, equipped with saw-toothed crusher and nitrogen plants to work without oxygen.

Organoleptic characteristics

Color: bright green.

Bouquet: fruity and fragrant with hints of artichoke and cut grass.

Taste: strong olive taste, markedly grassy with dominant notes of artichoke and green almond. It possesses and intense and marked bitter and spicy hit.

Expert Opinion

Strictly raw on potatoes, lentils, chickpeas and vegetable soups in general. Excellent on red meat, fine fish and matched with fresh cheeses which highlights the fresh-vegetable component of the olive oil.
