Our farm has organic certification, and for years produces an excellent extra virgin olive oil. The majestic olive trees, which rise in the beautiful hills between Spello and Assisi, are of different varieties: first of all there are the fine moraiolo, the frantoio and the leccino . Throughout the year a careful cultivation of the plants is carried out manually with the use of organic fertilizers. The olives, collected by manual stripping, are worked within 12 hours, by a cold dripping process named Sinolea Method, that ensures a final product with low content of acidity and high organoleptic characteristics. The distinctive feature of the Sinolea method is to ensure a product characterized by the highest quality and superior property. The Sinolea method enhances the organoleptic characteristics of virgin olive oils ensuring the highest content of natural antioxidants and specific components related to the quality.
