Type of soil: very shallow, medium texture, with a limestone tendency S.l.m. Height : 200-350 m.

Type of Harvest: Harvested by hand in a stage of early maturing
Extraction Method: Cold continuous plant, three-phase plant.
Color: emerald green with golden tones
Smell: medium fruity, elegant with a sharp feel of grass and an aromatic array that reveals scents of green apple, radish, chicory and artichoke, with hints of almond and pine nut.
Taste: robust but harmonized, with a pleasant bitter sensation and a more intense spicy one; the finish is rich with notes of chicory and an elegant mineral note.
From very delicate dishes with freshwater fish, to more robust dishes from the Trentino tradition, such as salt-cured meat, Torbole broccoli and strangolapreti homemade pasta.
