Provenance: Olive groves in the valleys of Illasi and Mezzane, north of Verona at the foot of the Lessini mountains
Olive varieties: Grignano, Favarol, Perlarol, Leccino
Type of soil: 250/400 m above sea level, south-west facing
Type of Harvest: Harvested by hand using plucking and pneumatic pickers, between 10 October and 10 November
Certifications: Slow Food Presidium
Extraction Method: Mechanical extraction using two-stage continuous cycle method, slow filtration and storage under argon.
Color: Emerald green
Smell: Medium fruity, green, with hints of herbs and spring flowers, green tomato and aromatic herbs
Taste: Very persistent, harmonious, elegant and complex.
Due to its characteristics it lends itself to being eclectic, but is recommended on legumes, fresh Italian cheeses, vegetables, fiordilatte or vanilla ice cream, or alone in the morning on an empty stomach as an antioxidant.
