Type of harvesting: manual during the veraison period, generally at the end of October, first ten days of November
Soil type: 200 m above sea level, medium texture, well drained, mainly composed of silica, limestone and rich in organic matter
Extraction method: The olives are pressed within 12 hours of harvesting in a two-stage continuous cycle plant with a full extraction system and controlled processing temperature.
Color: clear with bright green reflections
Smell: the prevailing scents are of tomato and cut grass
Taste: intense herbaceous fruitiness; vigorous bitterness, notable spiciness.
Excellent on grilled red meats, baked rabbit and poultry; it is also particularly suitable for legume soups and mature cheeses.
